Carbon Steel Knife Care
When using a carbon steel knife, the care given can help that knife last a lifetime. There are 3 main steps to caring for a carbon steel knife and those are:
Wash the knife after use with water and soap ensuring all food particles are off the blade.
Thoroughly dry the blade with a towel
Apply a rust inhibiting coating such as a blade wax or a food grade mineral oil, I recommend wax due to the longevity of the coating.
Helpful tips,
Never use a knife block for a carbon steel blade, knife blocks can promote rust due to moisture that can be trapped in it
NEVER put a knife in the dishwasher especially a carbon steel knife, not only is the dishwasher hard on the edge, but it will also absolutely cause a carbon steel knife to prematurely rust.
Patina is your friend, contrary to popular belief with a carbon steel knife patina is a rust inhibiter, reminder patina is good rust is not.
Do not leave food on the blade especially acidic foods.
Do not leave your knife in the sink to clean later, I promise it is easier to quickly wash and wipe your knife clean after use than trying to clean rust of the blade.
