Carbon Steel Knife Care

When using a carbon steel knife, the care given can help that knife last a lifetime. There are 3 main steps to caring for a carbon steel knife and those are:

  • Wash the knife after use with water and soap ensuring all food particles are off the blade.

  • Thoroughly dry the blade with a towel

  • Apply a rust inhibiting coating such as a blade wax or a food grade mineral oil, I recommend wax due to the longevity of the coating.

Helpful tips,

  1. Never use a knife block for a carbon steel blade, knife blocks can promote rust due to moisture that can be trapped in it

  2. NEVER put a knife in the dishwasher especially a carbon steel knife, not only is the dishwasher hard on the edge, but it will also absolutely cause a carbon steel knife to prematurely rust.

  3. Patina is your friend, contrary to popular belief with a carbon steel knife patina is a rust inhibiter, reminder patina is good rust is not.

  4. Do not leave food on the blade especially acidic foods.

  5. Do not leave your knife in the sink to clean later, I promise it is easier to quickly wash and wipe your knife clean after use than trying to clean rust of the blade.
